Who doesn’t love a delicious garlic prawns recipe? While I love garlic prawns on their own, I wanted to turn the dish into a one pot meal and so I decided to combine it with rice and veggies. The result was this garlic, prawn, rice and broccoli dish that is all kinds of yummy and so easy to make for a quick mid-week one pot meal.
This dish is big on flavour but not on effort – just the way I like it! The veg and herbs I’ve used can easily be replaced with whatever you have in the fridge so it’s a dish that’s easy to throw together with whatever you already have.
GARLIC PRAWN RICE WITH BROCCOLI
Serves: 4
55 gms butter
4-5 garlic cloves minced
20-25 large prawns raw
1 small broccoli cut in to florets
230 gms basmati rice
60 ml chicken or vegetable stock
25 gms finely grated parmesan cheese
1-1.5 tbs finely chopped chives
salt & pepper to taste
Start by blanching your broccoli in boiling water for about 2-3 minutes. Drain and set aside. Cook your rice according to the instructions on the packet and set aside.
Next, melt the butter on a low to moderate heat and add your garlic. Stir the garlic until it just begins to colour but make sure it doesn’t burn. Add your raw prawns and stir until cooked which takes about 3 minutes. Now add your blanched broccoli and stir for another minute or so.
Now add your cooked rice to the pan and give everything a really good mix. Then add the stock and mix again. Finally add the parmesan cheese, chopped chives, salt and pepper and mix really well.
I first got the inspiration for this garlic prawns recipe with rice when I found this dish on pinterest. But as I wanted to turn it in to a complete meal and also wanted to use raw prawns, I adapted it quite a bit. Now we often eat it as a mid-week meal but I’ve also served it as a side dish when we’ve had friends over.
