If you like your food packed with flavour, this Thai style grilled chicken dish is for you.  By adding aromatic Thai spices, a simple grilled chicken dish is taken to a new level.  It’s healthy, delicious and makes an easy mid-week family meal.

Recently we’ve decided to cut out red meat from our diet and eat just chicken and fish as it’s so much better for you.  So I’ve been experimenting with both new chicken and fish dishes and this is one of my favourite chicken dishes so far.  

Serves: 4

4 chicken breasts
small handful coriander leaves to garnish
2 limes cut in to wedges to serve

2 cloves garlic crushed to a paste
small handful coriander leaves and stems finely chopped
3 kaffir lime leaves finely shredded (or use lime zest instead)
2 tbs Thai fish sauce
4 tsp brown sugar
60ml coconut milk
1 green or red Thai chili (optional)

To start, take your chicken breasts and beat them so that they are flatter (about half the original thickness). I like to do this between two sheets of cling film and then beat gently with a meat hammer.

Next prepare all your marinade ingredients and mix them all together really well. Keep stirring till the sugar is mixed in and dissolved.

Pour the marinade over the flattened chicken breasts, cover and leave in the fridge to marinate for at least 2 hours but ideally overnight.

When you’re ready to eat, lift the chicken out of the marinade and place under a hot grill, turning half way through cooking.  The breasts cook really quickly so will need  just around 4 minutes on each side.  Make sure they’re cooked through but it’s easy to overcook them so keep a close eye.

Cut each breast in to strips, garnish with coriander leaves and serve with lime wedges.  I love this Thai style grilled chicken served simply with fragrant jasmine rice but you could also use the chicken to top Oriental style noodle salads.

I find that chicken can be a bit bland sometimes and while I want healthy, I don’t want boring.  This Thai style grilled chicken dish paired with those delicious flavours, is anything buy boring!

    Yum, I’m definitely going to give this a go, I love anything with coconut milk and Thai flavourings (especially coriander mmmm). I made a stir fry with similar ingredients but more Chinese, so soy based rather than coconut milk, and that was delicious so I’m sure this will be spectacular. Thanks for the recipe x
